Huo Shan Huang Ya - Yellow Tea

Huo Shan Huang Ya was created in Tang dynasty (618-907 A.D). The processing method of this tea was lost in 1940's (WWII) and was reproduced in 1972 by three old tea masters. Grown at an elevation of 1000+ meters, this is hand-crafted yellow tea, from Huo Shan county, Anhui Province. Its long, shapely deep-green leaves have been carefully crafted to bring out its deep smooth and lush character. Astringency in yellow teas is rare as the extra oxidization increases it sweetness. Always a refreshing and naturally sweet tea that offers liquor that is strikingly clear and clean.

The aroma of the dry leaves is quite sweet, there are notes of lightly roasted sweet corn, gently roasted sesame seeds, bamboo leaves, and a tiny hint of tomato leaves. At the finish of the sniff there is a hint of smoke. Once the tea has been steeped, the wet leaves take on an extra layer of richness. The toasted sesame and roasted sweet corn are stronger, they are accompanied by the aroma of fresh bamboo. The infusion is a mix of sweet corn ,kale and bamboo with a tiny hint of smokiness and pepper at the finish. The texture is creamy and smooth.

Tea Master's brewing guide: 1 teaspoon per 8 ounces water. The water to steep this tea should typically be about 180 °F. A steeping time of 1–3 minutes is recommended. Can be infused up to 4 times. For a cup of Iced Tea: put 50% more tea leaves into a teapot. Steep as directed and chill.
